We really love pasta. Usually we prefer noodles. Yes, noodles. Long, thin pasta. But not tonight! Tonight I made pasta shells with steamed veggies and meatballs in a goat cheese sauce. It was tastier than I expected. I was a little nervous about making a sauce out of the goat cheese but it wasn’t too overpowering.

We’ve been making a conscious effort to eat more flexitarian meals. This one had meat but it’s the only meat I’ve had all day. Some days we don’t eat meat at all anymore! It’s important for our health and the environment.
