One of our resolutions was to eat more healthy foods. This week we are working hard to cut out processed foods like bread, pasta, and rice and incorporating more vegetables instead. Tonight o made this sweet potato hash with jalapeño chicken sausage, red peppers, and onions with a little cumin, garlic, and Rosemary as seasoning. Alex fried up an egg for on top and we served it with avocado on the side. It was a hearty meal that would be perfect for any time of day.
