Overnight Oats with Raspberries and Chocolate Coconut Granola


After falling off the budgeting bandwagon, we logged back into Mint financial over the weekend. It didn't come as a big surprise that our biggest expense was food but I was pretty shocked to see just how much we've spent eating out over the last few months. Seriously. We would probably feel rich if we just didn't eat out on the weekends. We've been so much better about cooking at home but sometimes it's still tempting to grab breakfast or lunch on the run. Luckily, we were able to scale back some in January because eating vegetarian doesn't leave very many options for carry out or drive-thru meals. In an effort to reduce the temptation to eat out during the week, I've realized that some degree of meal prep is necessary. I decided to start with a breakfast overhaul.

I've been wanting to try overnight oats since I started cleaning up my diet at the beginning of the year. I ordered whole grain oats a while back through Jet.com and just now got around to making them. I looked up a bunch of different recipes on Pinterest but more or less decided to just wing it and make them the way that sounded good to me Sunday afternoon.

Here's a quick recipe: Combine 1/2 cup oats, 1 cup Almond milk, and 1/2 cup raspberries. Shake and refrigerate overnight. Wake up and top with chocolate chip coconut granola and honey.

I didn't really enjoy my first bite but the more I ate the better it tasted! I actually popped my mason jar in the microwave for a minute. I couldn't deal with the fact that they were cold. (I'm kind of weird about cold foods unless it's ice cream or dessert.) I only ended up eating about half the jar before getting full. I'd say overnight oats are going to be a little bit of an acquired taste for me but I'm so glad I tried them and plan to make them again this week!
